In the kitchen with Good chef/Bad Chef; Zoe Bingley-Pullen

I was lucky enough to be invited to attend an afternoon at cooking class with the beautiful and talented Zoe Bingley Pullen, a nutritionist and chef, infamous on the Channel ten show: Good chef, bad chef.

Zoe is also an author, presenter & educator, and has recently become a mother (yes, she is a superwoman, one worthy of my new crush).

To celebrate the launch of its new blended milks, Vitasoy partnered with ambassador Zoe Bingley-Pullin and foodie heaven, Williams & Sonoma (an absolutely stunning kitchen that would make anyone want to learn to cook), to run an exclusive interactive cooking workshop for influencers to experience the new products first-hand.

Im not sure if you feel the same way, but when you watch chefs prepare food its like a production you cant take your eyes away from, from their ridiculous chopping skills that when replicated look anything but elegant to her amazing simple and effective way of crushing fresh garlic…without garlic fingers (yes small things amuse my mind, but you cannot tell me youve not struggled peeling garlic!Often I find it put in the too hard basket and use pre prepared product #lazy).

I had to share with you the Cashew Nut Fritter served with a salsa topping and Rocket salad:

Zoebing

Prep time: 10-15 minutes

Cooking time: 10 minutes

Serves: 10-12 fritters

Ingredients for cashew fritters:
1 1/2 cups of raw cashews, finely ground

1/4 cup Vitasoy Soy & Almond Milk 
1/2 a bunch of fresh basil, finely chopped (alternatively use 2 dessert spoons of dried basil)
1/2 a large onion, finely chopped
1 egg, lightly beaten
1 tbsp. of Tamari soy sauce
Small amount of olive oil

Ingredients for salsa topping:
1 tomato, diced
1 tbsp. of Tamari soy sauce (alternatively use 2 pinches of salt)
2 tsp. tomato paste (gluten free)
2 cloves garlic, crushed
20g fetta or goats cheese (optional)

Method:

Cook onion in heated olive oil until soft. Combine the cooked onion, cashews, Vitasoy Soy & Almond Milk, basil, Tamari soy sauce and egg in a bowl. Stir until thick and sticky.
Use a dessert spoon to form fritters and cook in a pan on medium heat for 5 minutes each side, with a little olive oil.

Sauté the tomato and garlic in a pan for about 10 minutes, or until pureed. Add the tomato paste and Tamari soy sauce.

Serve the fritters on a plate with tomato sauce on top. Place slivers of
fetta/goats cheese on top of tomato sauce and garnish with fresh basil
leaves or coriander.

Serve with a green salad.

Monday Motivation…Femme Fatale {Joelle Christie}

Summer. is. coming.

Ugh oh. Time to put down the delicious nutrient dense superfood smoothies and switch to clean green juices.

One of the latest (and growing rapidly) trends…fitness modeling. Some of you may know I used to compete, but not anymore, Im trying to find my own balance (and look after my hormones for, hopefully, one day a family).

So inspired by this, I wanted to feature someone who motivates me, someone who is always in good shape, is always smiling and is genuinely ‘lovely’ (yes, my favourite word of the moment).

You have created a rapidly growing business; and your own profile as Joelle Christine Fitness Model, in the fitness & health industry, what do you attribute this success to?
I guess it all comes down to the fact that I’m a very normal and average person and I share all the struggles and challenges that I face and people are able to relate to that. So many people only share their highlights on social media and that can unintentionally cause others to look at their own life in a negative way. By showing the good and the bad that I go through I hope to inspire others and make them realise that health, fitness and happiness is achievable and attainable by everyone.

When did you decide to you wanted to be involved in the health industry?
Well I went through a period where I was extremely unhappy because I wasn’t eating right and wasn’t exercising and all of that caused me to have no confidence or self-esteem. And those things can impact you not only physically but also mentally. One day I stumbled upon some photos of a fitness model and she looked so happy, healthy and confident that I decided then to change my life. I joined a gym, started a program and after a while decided that I wanted to compete in a Bikini Fitness Competition. I started working towards that and was successful at the competition and the rest is history!

When did you decide you wanted to work for yourself? 
I’m still at Uni (studying law and business) so at the moment my fitness ‘ventures’ are a side project but someday I wish to combine my degree and love for fitness and create something special. I’m not sure what it is yet but watch this space!

How do you feel as an inspirational figure/mentor? 

I’m honoured that some look to me for inspiration and I hope that I am able to continue to inspire and motivate them as they in return motivate and inspire me. I’m just a normal and average girl who had a big dream and is making it come true so I want to be able to help others to find their passion and be happy.

Has there been any challenges along your journey?
Of course! One of the biggest challenges I faced was to find a method of dieting which worked for me (I now do flexible dieting and am very happy). I also faced some negativity regarding my decision to compete from some people but sometimes events like these show people’s true colours and can help to make your life a more positive place.
There’s been heaps of business related challenges too, and I guess it all comes down to showing companies that by working together you are able to add value to their business as they add value to yours.

How do you maintain balance between your Career and personal health?
Just keep the big picture in mind. Allowing stress to impact on your health isn’t worth it in the long run so just take a breath, surround yourself with supportive people and remember what you’re working towards.

What do you believe are the keys to success in business?
I think the key to success in business is passion. If you find something that you love and are passionate about then this love and passion will lead to success. “Success is not the key to happiness. Happiness is the key to success. If you love what you are doing, then you will be successful” (Albert Schweitzer).

What is your advice for anyone who has a dream? 
Surround yourself with supportive people, surround yourself with those than are also dreamers and know that there will be challenges but if you persevere then you will make your dream come true.

Top 3 healthy tips/advice?
1. Health and fitness is not a number on the scale – focus on how you feel rather than what you weigh.
2. Live a balanced life; treat yourself well and treat yourself. Eat healthy food and enjoy the occasional indulgence.
3. Hit your macronutrients and your micronutrients. Eat your vegetables!

I would love to travel around to schools and talk to students about self-confidence, beauty and happiness to try and prevent them from going through some of the struggles that I went through.

Must have now…Green Tea x50

I used to live my life on supplements, protein powders, bars, pre workouts. I was an addict.

I am an all or nothing personality type. I remember one particular Drs visit where I had to calculate the amount of caffeine I was having…a total of 800mg per day…no wonder I was suffering anxiety and had a high level of reaction (rather than response) to situations, and would collapse from exhaustion and adrenal fatigue on weekends.

Now after creating some hormonal imbalances for myself I try to get my nutrition from food where possible, but whilst also understanding that we live in a chemical world. Not to forget the benefits for weight loss. Reports have shown that green tea extract intake is associated with increased weight loss due to diet-induced thermogenesis, which is generally attributed to the catechin epigallocatechin gallate. That catechin-polyphenols are known to be capable of inhibiting catechol-O-methyltransferase (the enzyme that degrades norepinephrine) is a possible explanation for why the green tea extract is effective in stimulating thermogenesis by epigallocatechin gallate to augment and prolong sympathetic stimulation of thermogenesis. {Fitness Expert} Denver Steyn…Eating Disorders

I have spent time connecting with so many different people throughout my career, and recently I have spent more time actually listening to them, not the kind of listening that has my monkey mind wondering about what Im going to eat next, who I need to call, or what I need to do, but the real type of listening, the kind where you absorb the other persons words, active listening. It has been during this practice of listening I have been amazed at the wealth of knowledge that surrounds me…I felt it only right to share with you.

Today Im sharing Denver Steyn, a fitness expert who is a leading personal trainer in Qld, but also a genuinely good guy with a desire for knowledge and passion for fitness. He is (one of those) IIFYM followers, and it works for him. He is also a pro at the ‘selfie’, pre, during and post training. See below.

Nutrition is a core component of building muscle, losing fat, and ensuring your body is working as it should by providing the essential nutrients required to thrive and survive.

It is generally agreed that when you eat less you lose weight. When you eat protein you encourage your body to build and maintain muscle. When you eat carbs you provide your body with energy. When you eat fats you provide your body with essential nutrients for hormonal balance and transportation of other nutrients.

With that said, it is clearly important to incorporate all three macronutrients (protein, carbs, fat) in your diet.

People who go to extremes have the main goal of building muscle. This means more protein. Generally in excess of any study known to man. Protein protein protein. Every day. Every meal. In generic quantities without any consideration. 200g portions in the form of animal protein, 6-8 egg whites, protein shakes. Simple generic portion sizes. Some how it is whats required to get the job done, irrespective of a personal body composition assessment.

So if protein builds muscle which is an obvious major goal, and I need to eat less to lose weight, why not just eat minimal amounts of carbs and fats? That works right? How many times have you heard of people who “live” on chicken and broccoli. It has become more of a joke these days however it is still very relevant and continues to happen.

The issue is, people see short term results and don’t consider the long term effects. Eat protein; build muscle, eat less; lose weight or even; get “shredded”.

Knowing the importance of nutrition, your body will always get the calories or nutrients it requires to survive. It is simply impossible to excessively under eat without your body responding in more ways than just losing weight, or body fat. What I mean is, when you are restricting your daily food intake your body will force you to give it what it needs to keep functioning at its preferred level of health or body composition “set point”. This is part of why we get cravings, why we snack on foods without thinking, and the big one; why many people are binge eating on a weekly basis.

Having a diet that focuses on protein intake and not much else, you can bet your body is fighting you on a daily basis. How many times have you had that craving to eat one small treat and ended up eating everything in sight? That could be an example of your body “getting what it needs”, regardless of what you are trying to force it to do.

So when fitness goes too far, people are following eating plans that have very little consideration or recruitment of essential dietary fats and carbohydrates. Protein is the key, with green vegetables and salads not really for the micronutrient content but more because they keep you full and help in the process of feeing “okay” in what is essentially planned starvation.

Binge eating is prevalent amongst those who preach the idea of “eating clean” or being strict with generic uneducated fitness eating plans. More so, it is associated with those who are over eating protein but under eating total calories in an effort to build muscle and get shredded.

I have seen first hand people who claim to be health & fitness role models who are closet binge eaters yet portray a lifestyle of nothing but clean foods and won’t allow their image to be hurt by being truthful about their less than desirable eating habits.

Although I have never been one to hide my eating habits, I have spent multiple periods of my life where I was doing everything you have just read. Under eating, binging, thinking nothing but protein and a few fibrous vegetables was a way of life. I thought it was a necessary sacrifice to get that elusive shredded and muscular physique. It is obviously a less than desirable outcome when you realise you have developed an eating disorder and have created a yo-yo cycle of “clean” and “dirty” eating as well as a fear of certain foods and a very restricted and psychologically damaging approach to nutrition. The first untold truth.

Charlie: You are the Founder Jacqueline Evans skin care, a successful natural and organic range, what do you attribute this success to?

So many different factors Charlie. But ultimately I believe it is lots of hard work and having unwavering passion for what you do and what you stand for.

After studying Chinese at university, I became very interested in Eastern Medicine. I then went onto to study naturopathy and suddenly everything I was learning at college connected with me; it just made sense. I have an absolute obsession with biochemistry and understanding how the body works. New research is confirming that the food we consume has the ability to ‘communicate’ to our genes, and this verifies that we are able modify certain lifestyle related illness with our food choices. That’s pretty powerful.  After years in the industry looking at food and nutrition, I became aware that the skin is our largest most permeable membrane and will absorb up to 60% of what is applied to it. I quickly looked at the ingredients in all my personal care products and was alarmed. Having a hormonal imbalance myself, but have a balanced diet, this seemed to be the missing part to the puzzle. I spent about 8 years developing the range (and growing the self belief) to launch the range, which is made entirely of natural and organic ingredients.

Charlie: How do you feel as an inspirational figure/mentor?

Thank you. You know, I try to be an inspirational role model for my two daughters. They are my biggest students and also my biggest teachers.  They have taught me lessons like perspective and patience.  I want them to know that they can dream big and achieve anything that want.  I am encouraging them to have a healthy relationship with food and of body image.

Charlie: Has there been any challenges along your journey?

Yes, I’ve been learning as I go that’s for sure.  Starting out, my biggest challenge believed in myself enough to take that leap of faith and quit my full time job and focus on building a skin care brand.  I now have a very small team of amazing people that help me, but starting out the isolation of working on my own was challenging.  I missed having someone next to me to bounce ideas around.  Looking back, this forced me to throw myself out there and network with like-minded souls in the industry and from that I have forged some incredible relationships

 

Charlie: How do you maintain balance between your Career and personal health?

This is such an important question. When you are running your own business, it is 24/7and all consuming, so making the time for yourself simply has to be a priority. For me it’s the little things, the little things that are achievable such as, stopping work and eating lunch at the table or outside with no distractions of the computer, not checking my phone until my work day officially begins, the occasional soak in the bath with some Rose & Vanilla Bath Salts, moving my body, and we have a strict no technology in the bedroom rule and I try very hard to get to bed around 10pm most nights. My non-negotiable is always choosing food to nourish my body.

My mantra for 2014 is to go SLOW.  I feel like I spent last year in fast-forward, and so this year I am desperately trying to live in the moment. Its not always easy or possible, but I am trying.

Charlie: What do you believe are the keys to success in business?

Hard work, passion, self-belief, taking risks, listening and did I mention hard work!?!

My principles are very simple — source the best natural and certified organic ingredients, offer honest, expert advice and create incredible products to feed and nourish your skin.

 

Charlie: What is your advice for anyone who has a dream?

Own your dream, in every sense, then just do it!

Charlie: What can we look forward to next from you?

I’ve been listening to you all and am so excited to let you know that we will be launching two new Hand Creams in the coming months!!

1.Take ownership of your health. Take the time to listen to your body and what it needs.

2. Hydrate. Drink more water and moisturise

3. Eat Well. You are what you eat.

What is a Health Coach?

Sometimes in life we all need a hand to hold, a shoulder to lean on, a support system. Sometimes you can find that this doesnt come from those closest to you, as we go through life’s trial and tribulations, we find we have to evaluate the true support in our systems.

This is where a Health Coach comes in. Different to a personal trainer or a nutritionist. A health coach is someone to support you and offer guidance so you can find your passion and purpose and make the right (healthier and happier) choices.

Its a gentle reminder to create healthy habits, and someone to be responsible to. Someone to be there.

Sometimes all we need is to talk and have someone listen. Think about it when was the last time you actively listened to a loved one? When was the last time you were heard?

As a health coach I dont recommend specific diet plans or [programs, however we work together to find out what works for you. Biochemical individually. You are unique. Your mind, your body, your lifestyle requirements. Together we can create the life you love.
